Entry8 - Simla Mirchi Rice by Swetha Kaky


Simla Mirchi Rice -- North Indian Rice
INGREDIENTS:

Shimla mirch - 2(Green and Orange)
Onions - 1 big
Frozen Green Peas - 1/8 cup
Salt - As per taste
Green Chilies - 3 to 4(small)
Jeera - 1 tsp
Cinnamon stick - 2 small pieces
Cardamon - 2 to 3
Cloves - 3 to 4
Oil - 3tsp
Ginger paste- - 1/2tsp
Garlic paste - 1/2tsp
Green onions - For garnish
Cilantro - For Garnish

MASALA:

Chana dal - 1tsp
Urad dal - 1tsp
Coriander seeds - 1/2 tsp
Ground nuts - 1 tsp
Frozen coconut - 3/4tsp
Red Chillies - 2 to 3
Jeera

PROCEDURE:

1. Cook 1.5 cups of Basmati rice adding 1tsp oil and 1.5 cups of water for 1 cup of uncooked rice and keep it aside.
2. Take a pan and add 1 tsp of oil. Heat it and add all the masala ingredients and fry them until a nice aroma comes out. Take it off heat and let the mixture cool. Once it is cooled grind into a smooth powder and keep it aside.
3. Now take wide bottomed pan and add the oil and add some green chillies, cinnamon sticks,cardamon and cloves and fry them a little and add thinly sliced onions, fry them until they become translucent. Now add the ginger and garlic paste along with the frozen peas and some salt. Now cover it with the the lid
and let everything cook covered under medium flame.
4. Now cut the shimla mirch length wise, put them in a bowl add a pinch of salt to it and microwave for 5mins, by mixing them once in the middle. In the mean while the onions also get cooked. Now the capsicum can be added to the onions along with ground masala powder and required salt. Also add the cooked rice and mix them altogether and let it cook for about 2mins.
5. Now it is time to garnish the rice with cilantro and green onions. Can be served hot with Raitha
